Tried and True Recipe #2: Burrito Bowl

Today I am bringing at you another awesome recipe that will make your mouth water and leave you coming back for more. This is my own take on a burrito bowl. I am sure that many of you are familiar with Chipotle, but I would consider this a “healthier” alternative. Healthy, of course, is a relative statement, which is why it’s in quotes.

First off, I decided to create a marinade for the chicken. I used an entire pack of chicken tenderloins. I wanted to go for the same flavor as Chipotle’s grilled chicken. As you know, I don’t really use measurements. I used about a palm amount for each seasoning, adding more where it seemed fit.

This included: cayenne pepper, onion powder, black pepper, garlic powder, paprika, chili powder, cumin, cilantro and olive oil. I put it on the George Foreman grill and then cut it into cubes.

The bowl included marinated onions and peppers that were caramelized on a skillet. They were seasoned with cumin, paprika and olive oil. The Jasmine rice was seasoned with cilantro and I Can’t Believe It’s Not Butter! Spray. I looked up a recipe for the salad dressing you get at Chipotle, and it was amazing. I will link it here. Other toppings included: salsa, beans, cheese, sour cream and arugula.
